Food Fair: Chia-A-Noodle DIY

Chia-A-Noodle is one of the simplest forms of noodle dish; however, it is so reminiscent of the old days when Taiwan was still an agricultural society and people were working so hard to make ends meet. A Chia-A-Noodle noodle stand was usually found in the back alley and served only the regulars in the neighborhood. Chia-A-Noodle is cooked in a bamboo basket with simple dried red onion, bean sprouts and chives. After removing the noodle from the basket, it is mixed with a special ground pork sauce. In 2009, while we celebrate the new journeys ahead of us, visitors to the festival would be able to travel back in time and have an opportunity to DIY this tasty but simple noodle dish.
